Ingredients

  • 180 g boiled potatoes
  • 50 g butter at room temperature
  • 4 eggs
  • 150 ml fresh cream (or Parmalat UHT long life cooking cream)
  • 50 g flour
  • 200 g fresh soft goat cheese
  • Parmalat Zymil milk
  • 8-12 Delicius anchovies in olive oil
  • thyme to garnish (fresh or Cannamela's)
  • Cannamela organic black pepper, freshly ground
  • salt

Method

  1. Mash the potatoes while still hot.
  2. Use an electric mixer to whip the butter together with the egg yolk, until it becomes foamy.
  3. Then, add the liquid cream and the mashed potatoes.
  4. Add the sifted flour and salt to your own taste, then finally add in the egg whites, whisked until stiff.
  5. Cover a square baking tray with generously buttered parchment paper and pour the preparation into it.
  6. Bake in the oven at 180 °C for approximately 45 minutes.
  7. Leave to slightly cool before removing the pie from the tray.
  8. In the meantime melt the soft goat cheese with a few spoonfuls of milk.
  9. Cut the pie into square one-bite pieces, spread the soft goat cheese cream over them and garnish with half an anchovy and thyme sprigs.
