Ingredients

  • 200 g Riso Gallo 3 Grains
  • 100 g raw sausage meat
  • 1,5 litre hot chicken or vegetable stock
  • 3 celery sticks, finely chopped
  • 2 carrots, finely chopped
  • 1 medium onion, finely chopped
  • 1 small bunch of basil (fresh or Cannamela's)
  • 1 leek, finely chopped
  • 1 diced potato
  • 1 garlic clove (fresh or Cannamela's)
  • 2 tbsp. Filippo Berio Gran Cru Toscano extra virgin olive oil

Method

  1. Break up the sausage meat into chunks and sauté it in a pan until cooked. Then remove from heat and keep warm.
  2. In a casserole, sauté the finely chopped onion, celery sticks, carrots, leek, potato and garlic in 1 tbsp. olive oil until softened.
  3. Add the rice and stir to coat well.
  4. Add all of the stock and cook for 18 minutes, or until the grains are cooked.
  5. Add the sausage meat and stir well.
  6. Serve hot, drizzling with a few drops of olive oil and adding some shredded basil leaves.

You want to turn this recipe vegetarian or even vegan? Then leave out the meat and replace it with borlotti beans or chickpeas!

Serve as a one pot dish followed by a large, colourful salad or by vegetable side-dishes.

This rich soup is the ideal dish for cold autumn and winter days, when all you crave is something hot and steaming to warm you up from the inside. This recipe can be modified according to your own personal tastes, you can replace the vegetables you're not so fond of with some of your favourites or even use beans, chickpeas or lentils instead of (or on top of) the sausage.
