  • 10 Noberasco organic dates
  • 2 russet apples
  • 40 g butter
  • 2 eggs
  • 2 tbsp of sugar

Method

  1. Peel and cut the apples into small pieces.
  2. Put them into a pot, cover with water and allow to cook with a knob of butter, stirring occasionally, until they have softened.
  3. Mash them using an immersion mixer and add the minced dates.
  4. Beat the egg yolks with the sugar until you get a creamy consistency and add them to the apple puree, mixing carefully.
  5. Whip the egg whites until stiff and fold them gently into the mixture, making sure to keep the lightness and fluffiness you achieved during the whipping process.
  6. Butter pudding moulds and sprinkle them with sugar.
  7. Pour the mixture into the moulds and arrange them in a pan with water.
  8. Bake in a bain-marie at 170 °C for about 30 minutes.
