  • 3x medium eggs
  • 60g sugar
  • 200g mascarpone
  • Fabbri Minitopping Wild Strawberry Syrup
  • 15-20 light biscuits (similar to ladyfingers)
  • 50ml of amaretto syrup
  • Wild strawberries to decorate

Method

Mix the egg yolks with half the sugar. Add the mascarpone and mix gently until it is completely incorporated. Set aside and start mounting the egg whites. As soon as they start to swell, add the rest of the sugar while continuing to work with the whisk until it reaches a consistency of stiff snow.

Fold the the egg whites into the egg and mascarpone mix stirring from the bottom up (to prevent the egg whites from collapsing).

Prepare the syrup for the biscuits: in a small bowl, dilute the amaretto syrup with 2-3 tablespoons of water and cut the biscuits into chunks.
Compose the Tiramisu in some small cups or bowls: put a small dose of mascarpone cream on the bottom, then cover with some biscuit chunks soaked in the Amaretto syrup. Finally, pour a layer of Fabbri Minitopping Wild Strawberry Syrup on top. Repeat until you fill the the cup, finishing with a layer of mascarpone cream that you can decorate with strawberries and mint leaves.
 
You can also use a red fruit coulis prepared by boiling a small pot of red fruits with a spoon of Fabbri Minitopping Wild Strawberry Syrup. Have fun experimenting with more variants using the large assortment of Fabbri toppings, surprising your guests with new and original recipes.
