Using swordfish turns this recipe into a gourmet dish. The Xiphias Gladius is quite a big fish, it can reach up to 5 metres in length and can weight around 400 kg. The sword, which is an extension of its jaw, is used to capture prey and to fight against its only predator (beside humans): the mako shark. Living in all oceans, as well as in the Mediterranean, the Black sea, North sea etc, researchers have found that swordfish has been fished in Sicily since 1400-1600 B.C. Its flesh is rich in proteins and it's a good source of vitamin B12, B6, niacin, phosphorus and selenium.
