Ingredients

  • 24 pcs of Zero Olio® Grilled Champignon Mushrooms
  • 12 fresh anchovies (or Delicius preserved anchovies)
  • 40 g fresh bread
  • 3/4 laurel leaves (1 for the bread and some others as garniture)
  • Filippo Berio extra virgin olive oil
  • Cannamela organic black pepper
  • salt
  • >> Serve with:
  • Colussi crackers
  • OR: Amica Chips wholemeal Frumì croutons

Method

  1. Put the bread with a laurel leaf into a blender and blitz.
  2. Wash and clean the anchovies, then season them with salt and pepper.
  3. Sprinkle the anchovies with the bread crumbs, add a few drops of extra virgin olive oil and roll them up.
  4. Put the anchovies in a hot oven (220°C) for a few minutes.
  5. Serve with the Zero Olio® Grilled Champignon Mushrooms.

Chef's tip

If you don't feel confident cleaning the anchovies yourself, then you can get Delicius preserved anchovies. We suggest that you do not bake them in the oven though, and rather just sprinkle them with the toasted, laurel-flavoured bread before serving.

Serving suggestion

Serve as an appetiser or a snack with some croutons, crackers or homemade bread. This recipe goes well with vegetable- and fish-based courses.
