Ingredients

  • 340 g Riso Gallo risotto rice
  • 40 g butter
  • 1 finely chopped medium onion (fresh or Cannamela's)
  • 1 glass of dry white wine
  • 1.2 litre hot vegetable or chicken stock
  • 100 g grated Parmareggio Parmigiano Reggiano
  • 300 g mushrooms

Method

  1. Sauté one finely chopped medium onion and the mushrooms in 40 g of butter until softened. 
  2. Add 340 g of Risotto rice and coat until translucent. 
  3. Add one glass of dry white wine, and cook until evaporated. 
  4. Add 1 litre hot chicken or vegetable stock and simmer, stirring occasionally. After 14 minutes the stock will have been absorbed, the rice will be cooked and creamy, yet retaining a desired crunch in the centre. 
  5. Stir through grated Parmesan cheese and serve.

Chef's tip

For a less 'al dente' consistency add a ladleful of the hot stock at a time and simmer until absorbed, continue in this way until the rice has reached the desired consistency. 

We recommend garnishing the plates with some chopped fresh parsley for extra colour and flavour.

Family tip

You can turn this dish vegan by simply replacing the butter with extra virgin olive oil and leaving out the grated parmesan. The result will still be great!

Dish history

Mushroom risotto is a classic dish, especially in autumn when the key ingredients are in season. It is characterised by a tasty and aromatic flavour, particularly if made with the king of mushrooms: the porcini mushroom. Its flesh doesn't turn black after having been cut and keeps its scent even after cooking. Mushrooms are not only delicious ingredients, but also valuable allies for good health, since they are rich in vitamins, mineral salts, fibre, folic acid and beta-carotene.
