  • 4 salmon slices of about 150 g each
  • 8 Noberasco organic prunes
  • 5 scallions
  • Filippo Berio Special Selection extra virgin olive oil
  • ½ a glass dry white wine
  • Cannamela black pepper, freshly ground

Method

  1. Steam the salmon slices for ten minutes, season with salt and pepper.
  2. In the meantime, brown the cross cut scallions in a frying pan with a little olive oil.
  3. Add the pitted prunes and the white wine. Simmer and reduce over high heat.
  4. Serve the salmon slices dressed with the prune and scallion reduction.

You can add some finely chopped sage or thyme to the reduction, for an extra flavour.

Serving suggestion

Serve as a main course followed by salads or vegetable-based side dishes. If you're serving a complete meal, choose a first course to go with it from the ones containing fish or sea food (e.g. Tagliatelle with prawns or Seaweed spaghetti with clams).
