Ingredients

  • 4 large ripe vine tomatoes
  • 2 packs of Auricchio buffalo mozzarella, drained
  • 1 large ripe avocado, peeled and stoned
  • fresh basil leaves (or Cannamela's)
  • >> For the dressing:
  • 6 tbsp. Filippo Berio Gran Cru Monti Iblei extra virgin olive oil
  • 2 tbsp. Ponti red wine vinegar from Chianti D.O.C.G.
  • Cannamela organic black pepper, freshly ground
  • a pinch of sugar
  • salt
  • >> Serve with:
  • Amica Chips Frumì croutons

Method

  1. Slice the tomatoes, mozzarella and avocado and arrange in overlapping slices on four plates. Scatter over the basil leaves.
  2. Place all the dressing ingredients together in a small bowl and whisk together with a fork until smooth and blended. Drizzle the dressing over the salad and serve immediately with crusty bread.

Chef's tip

if you like it sweeter, use balsamic vinegar instead of the red wine one.

Serving suggestion

Serve as an appetiser or in a buffet/picnic. Very nice in summer as a light and complete dish.

Vernaccia di San Gimignano La Gentilesca DOCG; Pinot noir or Riesling (italico di torgiano).

Family tip

It is up to your taste, but we recommend you choose Filippo Berio Gusto Fruttato olive oil. Otherwise, if you like a stronger tasting olive oil, go for the Extra Virgin one.  

Dish history

Tricolore Salad is a variation on probably the most well-known and popular Italian salad, Caprese Salad, made with tomatoes, mozzarella and basil. This dish comes from the Campania region in the south-west of Italy but it's enjoyed everywhere. The name of this salad, 'tricolore' (three-coloured), refers to its colours, which are the same as the Italian flag - red, white and green. This recipe features one of the most delicious mozzarella, that is buffalo mozzarella. What distinguishes it from all other mozzarellas is the fact that it's made from 100% domestic water buffalo whole milk. The perfect dish in summer, when tomatoes and basil are in season and therefore tastier, it will fill you belly and refresh you.
