Ingredients

  • 200 g chocolate plum cake or left over chocolate soft cake
  • 2 tbsp. low-fat yogurt
  • Noberasco organic coconut, grated
  • 1 pinch of ginger
  • 1 pinch of Cannamela organic cinnamon powder

Method

  1. In a bowl, break the plum cake (or other kinds of cake) into small pieces.
  2. Add the yogurt and mix well with a wooden spoon to obtain a smooth but firm dough.
  3. Put it in the fridge for 1 hour.
  4. Mix some tbsp. of grated coconut with ginger and cinnamon.
  5. Shape small balls with the dough and coat them the in the coconut/ginger/cinnamon mix.
  6. Store in the refrigerator and serve well-chilled (in order to keep the compactness).

Chef's tip

If you are not into spices, you can leave out the cinnamon and ginger powders and just roll the balls in plain coconut flour.

Serving suggestion

Serve at breakfast time or as an afternoon break together with a nice cup of coffee, with a freshly extracted orange juice or with Parmalat's Pineapple and Coconut drink.
