Amica Chips

Amica Chips SpA is an italian food company, founded in the early 90s by Alfredo Moratti and his partner Andrea Romanò in Castiglione delle Stiviere - Mantova, where it currently has its seat. The company is specialised in the production of chips, breadsticks, croutons, snacks, breads and appetizers; Amica Chips directly produces and commercialises its products in Italy.

In 2011 the company started exporting its products abroad and it's now present in more than 22 Countries. Amica Chips is ISO 9001:2008 as well as IFS FOOD KOSHER-Halal certified.

Raw materials.

The success of Amica Chips starts from here, from the choice of the raw materials: simple, high quality products. First class potatoes, salt and sunflower seeds oil.

Quality.

The main characteristic of the company is the "know-how", the ability of producing chips of great and constant quality. To do so, the most appropriate varieties of potatoes are collected, according to the season, in Italy and in other european Countries. The potatoes are stock in storehouses where they are left to age in a controlled atmosphere environment, as far as temperature, humidity, light and "silence" are concerned, so that the sugars can level off to the point where the product is ready for the next processing phases: cutting and frying. This way the so-called "blancing"-process, which drains starch from the potatoes and is used by other companies, can be avoided.

The production cycle.

  1. Potatoes are collected in a big hopper.
  2. The whole process is guaranteed by a system of supply and washing.
  3. Potatoes fall into a whirl provided with an abrasive system, which peels and cuts them.
  4. system, which peels and cuts them.
  1. Potatoes are washed and then fried in pure sunflower seeds oil at a temperature of 180°C.
  2. At the end, the chips are salted and ready to be packaged.

The flavouring process.

The processing of flavoured chips differs from the normal chips only in its final phase when, after having been salted, chips meet the flavour through an innovative machine called "the drum". This machine, through a movement of micro-vibrations, uniformly doses the aromas without breaking the chips.
