Giovanni Rana has been making pasta for over 50 years. His philosophy is simple: be true to yourself and the things that make you happy. He learned this as a boy in the family kitchen in Veronella and he still believes it today. For him, perfect pasta comes from a passion for food and the joy of sharing that passion with the people you love.
My journey began as a young boy, working with my brothers, making bread in the family bakery in Verona. In my early working days I started to notice an increasing popularity for fresh pasta as more and more women were starting to go to work and so no longer had the time to make their own pasta.
I had learned a lot about making bread and turnaling handmade fresh tortellini.
I bought a little second hand Moto Guzzi, filled the basket on the back with my fresh handmade pasta and used it to
make deliveries in and around my home town of Verona. Ah, my dear old guzzino has been with me ever since, we’ve come a long way together and have many stories to tell!
In Italy we have a passion for great tasting food, you could say it is part of our 'DNA'! For centuries we have used our land to cultivate great foods full of flavour and taste that are recognised the world over. I use many of these in my pasta so you can enjoy the real Italian experience time and time again.
Many of the ingredients I source to fill my pasta are classified as PDO (Protected Designation of Origin), but also Fresh Egg pasta
has its integrity protected by Italian Pasta laws. To make Fresh Egg Pasta the recipe must include the ingredient Semolina and at least 4 eggs (weighing 50 grams each) to 1 kilo of flour blend.
In Italy our passion and love of eating delicious food, simply prepared and made from quality fresh ingredients is best enjoyed shared in the company of friends and family.
It is a traditional dish that has been enjoyed for generations and the perfect bowl of pasta is simple, quick and easy to prepare. The trick is not to over cook the pasta so the fresh full flavours of the filling remain true and the pasta has an ‘al dente’ bite.

Verona is a beautiful, elegant small city in Northern Italy steeped in history, romance and culture; the home of Romeo & Juliet, great tasting food and delicious wine from Italy’s biggest wine producing region - Veneto.
Pasta has had its heart in Verona since 1300 where residents in the small town of Valeggio sul Mincio created their own legendary recipe for 'Tortelloni'. Every year this traditional dish is celebrated by 1,000’s of guests on the beautiful Visconti Bridge. It is a magnificent and truly romantic occasion that is still enjoyed today.
So, if you’d like an excuse for a little romance, simply create your own feast of the Love Knot Legend and enjoy my pasta with an Italian wine produced in the Veneto region from either a crisp white Soave or a bottle of Vapolicella!
