Ingredients

  • 250 g Sapori di Siena Almond Cantuccini
  • 500 ml fresh milk or Parmalat's Zymil
  • 100 g egg yolk
  • 150 g sugar
  • 1 vanilla pod

Method

  1. To prepare the ice cream, pour the milk in a saucepan and add the sugar.
  2. Add the egg yolk and beat with a balloon whisk.
  3. Open the vanilla pod, remove the seeds from inside, then add to the mixture.
  4. Heat to 85°C mixing constantly, then turn off the heat and remove the vanilla pod from the mixture.
  5. Once it has cooled down, put it in the refrigerator for at least two hours. Before putting the mixture into the ice cream maker, place it in the freezer until it is very cold but still liquid.
  6. Pour the mixture into the ice cream maker and let it run until you have a thick and creamy ice cream.
Chop the Cantuccini in a blender, keeping  4 whole for decoration.
  7. Mix the Cantuccini crumbs into the cream gelato and place it in the freezer until it's time to serve it.
  8. Prepare the ice cream bowls with three scoops of Cantuccini ice cream and a few pieces of Cantuccini as decoration.

Chef's tip

If you want to make the ice cream even yummier, you can add some chocolate flakes or some soaked raisins to the mixture before pouring it into the ice cream maker.

Serving suggestion

Serve as a dessert after a nice, light meal or on its own in the afternoon.

Vin Santo, Passito, Moscato or Prosecco.
