Ingredients

  • 1 chicken
  • 2 golden onions
  • 200 g Noberasco organic peanuts
  • 100 g butter
  • 2 egg yolks
  • 1 tbsp. white all-purpose flour
  • a few sticks of green celery
  • 1 carrot
  • juice of 1 lemon
  • nutmeg
  • Cannamela organic black pepper
  • salt

Method

  1. Boil the chicken in lightly salted water with celery, carrot and 1 onion.
  2. Once cooked, allow to cool, then bone it and sieve the broth.
  3. In a pan, sauté the remaining diced onion with butter, until it starts to brown.
  4. As it lightly fries add a spoonful of broth to prevent burning.
  5. After a few minutes add a tbsp. of flour and the right quantity of broth for blending it in.
  6. Allow to cook until you get a golden and fairly thick sauce.
  7. Take off the heat and add the crumbled peanuts and the egg yolks, then mix in.
  8. Season with lemon juice and spices according to your taste.
  9. Place the boneless chicken on a serving dish and cover it with the sauce.

You can garnish the chicken with some freshly chopped parsley.

Serve with a large colourful salad, homemade bread or croutons/crackers.
