Ingredients

  • 650 g mashed potatoes
  • 1 egg
  • 30 g Noberasco organic hazelnuts, shelled
  • 30 g Noberasco organic peanuts
  • 30 g sunflower seeds
  • 120 g Auricchio smoked Provolone cheese, thinly cut
  • 3 tbsp all-purpose-flour
  • Filippo Berio extra virgin olive oil
  • Cannamela organic black pepper
  • salt
  • nutmeg
  • Parmareggio Parmigiano Reggiano, grated

Method

  1. Add an egg, pepper and nutmeg to the mashed potatoes and adjust with salt.
  2. Add the cheese and the flour, stirring well with a hand whisk, removing any lumps.
  3. Coarsely chop the sunflower seeds, the hazelnuts and the peanuts.
  4. Oil a baking pan and sprinkle the bottom with half of the chopped mix.
  5. Pour the potato mixture into the pan and level it with a spoon.
  6. Sprinkle the surface with the remaining mix of nuts and seeds, add two spoons of parmesan cheese and a drizzle of olive oil.
  7. Cover the pan with aluminium and cook in a pre-heated oven at 200°C for 15 minutes. Remove the aluminium foil and cook au gratin for 5 minutes.
  8. Allow it to cool down before serving.
