Ingredients

  • 250 g Ricotta cheese
  • 100 g Noberasco organic raisins
  • 2 apples
  • 50 g sugar
  • 50 g buckwheat flakes
  • salt

Method

  1. Quickly wash the raisin and allow it to soften in a cupful of water.
  2. In a bowl, add the raisin to the ricotta and work well with a spoon or fork.
  3. Add the buckwheat flakes, the apples cut into cubes and the sugar.
  4. Put in the little bowls and let stand in the fridge before serving.

You can add some chocolate drops or flakes if you want to give this dessert an extra slant!

Serving suggestion

Ideal served on its own, at breakfast time or as an afternoon snack.

Wine selection

Serve with a Moscato d'Asti or other sweet still wines.

Family tip

If you prefer, you can tweak the recipe by replacing raisins with chopped dried apricots or dried berries.

Ricotta is a typical and very versatile Italian cottage cheese: it can be eaten along with savoury dishes, be an ingredient of a savoury dish itself (e.g. pasta with ricotta, quiche..) or it can be a great dessert component! There are several Italian cakes and pastries in which ricotta plays the lead role. A couple of examples over all: Neapolitan 'pastiera', Sicilian 'cannolo' and 'sfogliatine' filled with ricotta.
