Tagliata with radicchio and balsamic vinegar

Ingredients

  • 2 little radicchio tufts
  • 2 rib eye steaks
  • 100 g of parmesan cheese
  • 1 orange
  • 2 rosemary twigs
  • Extra virgin olive oil
  • Balsamic vinegar
  • Salt and pepper

Method

Grate the orange rind and extract the orange juice. Flavour the rib eye steaks with a little oil, rosemary and pepper. Then, cover everything with cling film and rest for about 20 minutes. Place the following ingredients in a jar: half the orange juice, the grated orange rind, 4-5 tablespoons of oil, salt, pepper, and 2 tablespoons of balsamic vinegar. Close the jar and shake to mix. Clean the radicchio, cut it into slices and put it in a bowl. Warm a grill ready to cook the meat. Remove the rosemary and cook the steaks 2-3 minutes per side. Take the steaks off the grill and let them rest for about 1-2 minutes covered with alluminiuim foil. In the meantime, flavour the radicchio with contents of the jar. Cut the steaks into thin slices. Flavour the meat with oil, salt, pepper and a little balsamic vinegar. Before serving, add some parmesan shavings.
