Ingredients

  • 4 pears
  • 1 jar of Greek yogurt
  • 100 ml sparkling wine
  • 1 tbsp. chestnut honey or Ambrosoli honey
  • 2 tbsp. Noberasco organic almonds
  • juice of 1 lemon
  • 4 Cannamela organic cloves
  • Cannamela organic cinnamon, ground
  • 1 laurel leaf
  • >> For the fig sauce:
  • 250 g Noberasco figs
  • 100 ml sparkling wine
  • 1/2 cinnamon stick
  • zest of 1/4 lemon
  • juice of 1 lemon

Method

  1. Prepare the sauce by putting the figs in a pan with the sparkling wine, the cinnamon, the lemon zest and juice and a spoonful of water.
  2. Allow to simmer over low heat for 10 minutes, stirring constantly.
  3. Sieve everything and keep warm.
  4. Separately prepare the pears: peel them, cut them into 4 slices each, put them in a pan with the spices, the sparkling wine and cook for ten minutes.
  5. Arrange the pears on the dishes.
  6. While you warm up the fig sauce, mix the yogurt with the honey.
  7. Assemble the dish by placing a spoonful of the yogurt cream next to the pears and the fig sauce on the pears and yogurt.
  8. Garnish with roughly crushed almonds, then serve.

Chef's tip

Since we want to use the zest, make sure you choose organic (or at least un-waxed) lemons! If you want to turn this recipe vegan, just replace the regular yogurt with a soy one.

Serving suggestion

Serve as a light dessert at the end of a meal or on its own at tea time.

Gewürztraminer, Riesling, Vintage Port.

If you prefer, you can substitute the crushed almonds with walnuts.
