Method
1. Break up the chocolate and, alongside with the butter, place in a microwave and let it melt.
2. Beat the eggs and sugar with an electric whisk until puffed and light-yellow in colour. Add in the chocolate and butter and mix gently with a spatula. Continue to mix and add in the almond flour. Pour the mixture on to a 25cm diameter baking tray covered with baking paper.
3. Peel the pears, cut them in a half and remove the husk and seeds. Cut each half to create a pear fan. Gently lay then out on the top of the mixture. Cook in the oven at 180° for about 30 - 35 minutes. Allow to cool.
