  • 8 veal breast slices
  • 8 Speck slices (smoked prosciutto style ham)
  • 16 Noberasco organic apricots
  • 1 small glass Calvados
  • Filippo Berio extra virgin olive oil
  • Cannamela organic black pepper
  • salt

Method

  1. Beat the meat slices and garnish them with a slice of Speck and an open dried apricot in the middle.
  2. Roll them up and secure using a toothpick.
  3. Carefully brown the rolls in a pan, season to taste with salt and pepper, then simmer with the calvados.
  4. Add the remaining apricots and a spoonful of hot water.
  5. Allow the liquid to reduce until the sauce reaches a creamy consistency.
  6. Serve the veal rolls with the reduction.
