Allow the butter to warm up to room temperature. In a bowl, stir the butter and powdered sugar with a wooden spoon until obtaining a fluffy mixture. Slowly add the flour sifted with the vanilla powder, followed by the egg whites. Mix until well blended.
Cover a baking pan with parchment paper and preheat the oven to 200°C. Fill a pastry bag with the batter and, using a flat tip, squeeze out 6cm rectangles onto the baking pan. Be sure to leave adequate space between as they will expand during while baking. Place the pan in the preheated oven and bake for 10 minutes or until the edges of each biscuit begin to turn golden brown. Remove the pan from the oven and allow to cool. Remove the biscuits and store them in a sealed container.
When ready, serve the biscuits with the dairy free gelato, fresh fruit and mint leaves.
