Salad with tuna, peppers, mango and almonds

Salad with tuna, peppers, mango and almonds

This whole, very colourful dish evokes memories of Mediterranean summers and sunny days spent at the beach. The taste of the exotic mango with the Italian bell peppers, green leaves, tuna and almonds, makes this a balanced, highly nutritious salad, ideal for those watching their weight too. The perfect dish for a tasty, yet simple, lunch or dinner, great served with some homemade bread.

Spinach with nuts, fresh cheese & Balsamic vinaigrette

Spinach with nuts, fresh cheese & Balsamic vinaigrette

The leafy green vegetable we chose for this salad was Popeye's favourite food but, unlike the famous sailor, we prefer to consume it raw instead of having it coming out of a tin! The right time of the year for spinach is from November until March, when it is in season and can therefore deliver its richness in terms of nutrition at its very best: vitamin A and C, copper, potassium, zinc, calcium, phosphorous and lutein (which is good for your eyes) among others. Try out this delicious dish, where spinach meet cheese and nuts, all topped with a yummy vinaigrette!

Stuffed onions

Stuffed onions

If you like onions, but only use them as a 'secondary' ingredient in recipes, let us suggest a dish where they take on the lead role, with great success! The tender, juicy outer layers, filled with a savoury yet sweet filling, will seduce your guests and leave them wanting more. Ideal served as an appetiser, as part of a buffet or as a side dish to a delicate meat- or fish-based main course.

A light, fresh yet delicious and unusual dish, that you can serve with cheese or bread for an aperitif or as an accompaniment to a delicate meat- or fish-based main course. The perfect choice for late spring or summer nights, when its main ingredients are in season and a cold dish is a delight!

Summerish onion and potato soup with hazelnuts

Summerish onion & potato soup with hazelnuts

Onion soup is a traditional dish in many countries, thanks to the cheapness and broad availability of its main ingredient. The most famous recipe is the French one, 'soupe à l'oignon'. Here we suggest an Italian version of this dish: no butter and gruyère cheese, instead olive oil and potatoes, humble ingredients that, combined together, create wonders! The result is a delicious creamy soup, easy to make and quite balanced from a nutritional point of view.

Sun dried tomatoes with pecorino & broad beans

Sun dried tomatoes with pecorino & broad beans

This recipe couldn't be more representative of culinary Italian culture: broad beans (long described as 'the poor man's meat' because of their high protein and iron content) are widely used, especially in the south of Italy; sun dried tomatoes, originating from the smart thinking of the farmers, who had to find a way to preserve the produce for colder seasons; and Pecorino Romano, a product made from sheep's milk, mostly produced in Sardinia.

Sun-dried tomatoes with zucchini and spicy olives

Who can resist sun-dried tomatoes? Their savoury, salty taste, enhanced by herbs and spices, is perfect on bread or croutons. And you can make them even yummier by combining them with zucchini and olives - an appetiser that everyone will enjoy! Serve it at the beginning of a meal, during an aperitif or simply as a snack.

Toasted Panzanella with Auricchio on creamy gazpacho

Toasted Panzanella with Auricchio on creamy gazpacho

The Panzanella is a typical dish from central Italy, very famous in Tuscany, Marche and Lazio. The original recipe calls for stale bread, red onion, basil, olive oil, vinegar and salt, but over time some more ingredients, such as fresh tomatoes and cucumbers, have made it onto the list. We suggest to couple it with some fresh homemade gazpacho for an extra taste!

Tortiglioni with broccoli, peas and cheddar

Tortiglioni with broccoli, peas and cheddar

This recipe comes as a variation to the most famous 'pasta coi broccoli', which is a very appreciated dish of the peasant tradition. Here we suggest you enrich it a bit by adding some peas, a potato and diced Cheddar cheese.. You won't be disappointed!

Tricolore Salad

Tricolore Salad

Tricolore Salad is a variation on probably the most well-known and popular Italian salad, Caprese, made with tomatoes, mozzarella and basil. This dish comes from the Campania region in the south-west of Italy but it's enjoyed everywhere. Its name, 'tricolore' (three-coloured), refers to its colours, which are the same as the Italian flag - red, white and green. This recipe features one of the most delicious mozzarella, the buffalo one.

Vegetable cous cous with grilled Provolone

Vegetable couscous with grilled Provolone

Some might think couscous is a cereal, but in actual fact it is a traditional Berber product made of semolina, grains of durum wheat. This very versatile ingredient, a staple food in the regions of North Africa, can be cooked and served with vegetables or stews (meat or fish), but it also can be used to make delightful 'salads', such as tabbouleh, or like the one we are presenting here. The delicate taste of the couscous and vegetables perfectly matches with the full, rounded flavour of the Provolone cheese. Enjoy this dish and experiment with it creating your own variations!

Vegetarian pea meatloaf

Vegetarian pea meatloaf

If you are on of those people who think that meat doesn't necessarily need to be in every single dish, then you might like this recipe! With this in mind here is a suggestion on how to create a vegetarian meatloaf, with peas being the main ingredient: we can assure you, even the most convinced carnivore will enjoy it! Ideal as a main course, you can also serve it as an appetiser or, cut up, as part of an aperitif buffet.
