Ingredients

  • 150 g Barilla spaghetti
  • OR: 150 g Giovanni Rana fresh spaghetti
  • OR: 150 g Riso Gallo gluten-free spaghetti
  • 25 g Noberasco goji berries
  • 20 borage leaves
  • 1 shallot
  • 1/2 shot glass of goji juice
  • Auricchio Pecorino cheese, grated
  • Filippo Berio extra virgin olive oil
  • Cannamela organic black pepper
  • salt

Method

  1. Cook the spaghetti in plenty of salted boiling water (check the packaging for cooking time).
  2. While it cooks, prepare the sauce: wash the borage leaves, dry them with a paper towel and cut them into thin strips.
  3. Cut the shallot into thin slices and fry it in a large non-stick skillet with abundant oil.
  4. Add salt and pepper, the goji berries and, at last, the borage leaves. Stir and cook over a medium heat for 3-4 minutes.
  5. Add goji juice and cook for a few more minutes (the borage leaves only need to wither).
  6. Finally, generously dust with grated Pecorino cheese.
  7. Drain the spaghetti 'al dente', put it into the pan with the sauce, soften with a ladle of cooking water, cook for 2 more minutes and then serve.

Chef's tip

This dish can be easily turned vegan by simply omitting the grated cheese. If you like, you can replace it with crumbled almonds or some flakes of nutritional yeast.
