    serves 4

  • 2 packets Auricchio Provolizie Piccante, in thin slices
  • 500 g thinly sliced raw beef steak
  • 1 head rocket salad
  • 2 egg whites
  • 100 g toasted cornflakes
  • groundnut oil for frying
  • Cannamela organic black pepper
  • salt
  • >> Our wine picks:
  • Zonin Primitivo Salento IGT
  • OR: Masseria Altemura Rosato Salento IGT

  1. Arrange the beef slices on the cutting board (if they are small overlay them slightly), then season with salt and pepper.
  2. Stuff them with 2 thin slices of Auricchio Provolizie Piccanti.
  3. At one end, add the washed and dried rocket.
  4. Roll up the slices folding the outer edges inwards to make the meat roll. Secure them using toothpicks.
  5. Roll them in the beaten egg whites and in the crumbled corn flakes, then fry them for 1 minute in hot oil.
  6. Season with salt and serve.

Chef's tip

Careful not to burn the oil: if it starts smoking you've waited too long!

Serving suggestion

Serve with vegetable-based side dishes or with a big colourful salad.

Wine selection

Primitivo, Rosato, Merlot, Brunello di Montalcino, Syrah or Barbera.

Family tip

If you think Auricchio Piccante is too strong for you, you can replace it with Auricchio Dolce (mild) or Affumicato (smoked).
