Ingredients

  • 250 g fresh milk (or Parmalat Zymil)
  • 200 g sheep ricotta
  • 125 g all-purpose flour
  • 6 Noberasco soft natural dates
  • 1 onion
  • 1 egg
  • 2 g brewer’s yeast
  • Cannamela organic black pepper
  • 1 tsp Cannamela organic hot chillies, ground
  • nutmeg
  • Filippo Berio extra virgin olive oil

Method

  1. Prepare the pancake batter: dissolve the yeast in the warm milk.
  2. Pour the flour into a bowl, add 1 tsp. salt around the edge, some ground pepper.
  3. Make a well in the centre and add an egg.
  4. Pour the milk and stir with a whisk until you get a homogenous and smooth batter.
  5. Cover the bowl with a cloth and let it rest for 1 hour at room temperature.
  6. Meanwhile, cut the onion into fine slices and sauté it in a little oil in a frying pan. Season with salt and let it cool.
  7. Pour the ricotta it into a bowl, add some oil (to taste), salt, pepper, nutmeg and the hot paprika/chillies.
  8. Mix everything with a wooden spoon to obtain a smooth cream, then put in the fridge for 1 hour.
  9. Put the cream in a piping bag with a star nozzle.
  10. Chop the dates and add them, together with the onion, to the pancake batter. Cover again and rest for another hour.
  11. Heat a little oil in a 18 cm non-stick pan, then pour in a ladleful of batter.
  12. Cook the pancakes for 3-4 minutes on one side, then turn and cook for another 3 minutes.
  13. Arrange the pancakes on a plate and serve with the hot ricotta cream.

Want to turn this recipe vegan? Then just replace the cows' milk with a non-dairy one and make a cream with silky tofu rather than ricotta!

Serve at breakfast with coffee, tea or orange juice, or at any time of the day as a snack.

This dish is best enjoyed with light wines such as sparkling wines, Pinot Grigio, Chardonnay, Riesling, etc.. or with full-bodied red wines such as Ripasso Valpolicella Superiore or Primitivo.
