Ingredients

  • >> For the short crust party:
  • 250 g white all-purpose flour
  • 100 g cold butter, cut into small cubes
  • 70 g cold water
  • 1 pinch of salt
  • >> For the filling:
  • 70 g Parmareggio Parmigiano Reggiano (30 month old)
  • 30 g Noberasco organic almonds, shelled
  • 30 g Noberasco organic raisins
  • Cannamela organic black pepper
  • salt

Method

  1. For the brisé dough: pour the flour into a bowl, make a well in the centre and add butter and salt.
  2. Knead the dough by rubbing it through the hands until obtaining a sandy compound.
  3. Add water, mix with a fork.
  4. Transfer the pastry dough on a working surface and keep on kneading until it gets compact and smooth.
  5. Form a ball, wrap it in cling film and put it in the refrigerator for at least 40 minutes.
  6. Prepare the filling: put the almonds in a food processor and chop them fine enough.
  7. Dice the cheese and add it to the almonds.
  8. Add the raisins too and blend it all together again.
  9. Roll out the dough into two thin rectangles and spread it with the prepared filling.
  10. Season to taste with salt and pepper.
  11. Roll up the dough on itself starting from the longer side in order to obtain two cylinders.
  12. Put it in the freezer for about 20 minutes, then cut into slices.
  13. Arrange the slices on a baking tray with wax paper and bake in a preheated oven at 200°C for 10 minutes.
  14. Turn them once and finish cooking for another 4 minutes.

Feel like making these biscuits even more savoury? Then you might want to replace the raisins with sun-dried tomatoes and add some oregano to the dough.. The result will astonish you!
