Ingredients

  • 350 g Barilla Spaghetti
  • OR: 350 g Giovanni Rana fresh spaghetti
  • OR: 350 g Riso Gallo spaghetti (gluten free)
  • 300 g fresh codfish
  • 150 g canned white beans, rinsed
  • 2 ripe tomatoes OR Cirio chopped tomatoes
  • 1 red onion
  • 4 tbsp. Filippo Berio extra virgin olive oil
  • a bunch of rosemary (fresh or Cannamela's)
  • Cannamela organic hot chili pepper, to taste
  • fresh parsley, chopped
  • 1 tsp. sugar (optional)
  • salt

Method

  1. Cut the cod into pieces.
  2. Peel and slice the onion and dice the tomatoes. Heat a pan, add 2 tbsp. of extra virgin olive oil, the rosemary and the sliced onions.
  3. As soon as the onion gets a nice golden colour add the crushed chili pepper, the beans and the tomatoes.
  4. Allow the flavour to develop for a couple of minutes, then add the cod and cook for some minutes.
  5. Season with salt and pepper, remove the rosemary sprig and set aside.
  6. Cook the Spaghetti in plenty of boiling salted water.
  7. Drain the pasta 'al dente', toss in the pan with the sauce, adding a little of the cooking water if necessary.
  8. Drizzle with extra virgin olive oil, sprinkle with chopped parsley and serve.

Chef's tip

If you like you can cook the beans yourself. All you need to do is soak them in water for one night and then boil them for around 45/50 min (depending on the bean's variety and size).

Serving suggestion

Since this is a one pot dish, we suggest you serve it with a leafy salad or with vegetable side dishes.

Wine selection

Dolcetto, Chianti, Sauvignon blanc or Pinot noir.

Family tip

We recommend using 1 litre of water for every 100 g of pasta.

Dish history

This is a combination of two famous Italian dishes, 'pasta e fagioli' and pasta with codfish and tomato sauce. In some places in Italy, combining beans and fish is quite usual and for one good reason: it tastes great! Also, it makes an ideal pairing on special occasions, like for instance on Christmas' or New Year's eve. All you need is top quality ingredients and soon you'll have a one pot dish everyone will enjoy!
