  • Medusa sun-dried tomatoes
  • OR: Ponti sun-dried tomatoes
  • 2 zucchini
  • spicy olives, to taste
  • Filippo Berio garlic flavoured extra virgin olive oil

Method

  1. Cut the zucchini into thin slices and quickly pan-fry them with some olive oil and a pinch of salt.
  2. Add the sun-dried tomatoes and the spicy olives to the zucchini, then serve.

Chef's tip

Here's another way to prepare the zucchini: dust the thin slices with salt and let them lose their water content. Then rinse them and dress with extra virgin olive oil, thyme and lemon juice.

Serving suggestion

Serve with some crunchy homemade bread, with crakers or croutons for a delicious snack or appetiser.
